- 2 cups rolled oats 
- ¾ cup walnuts, roughly chopped 
- ¾ cup coconut flakes 
- 1 ½ tsp cinnamon 
- 2 tbsp ground flax seed 
- 1 ripe banana 
- 3 tbsp coconut oil, melted and cooled 
- 1 ½ tsp vanilla 
- ¼ tsp salt 
- 1 tbsp maple syrup 
Directions:
- Preheat oven to 325°F. Line a baking sheet with parchment paper. 
- In a large bowl, stir together oats, walnuts, coconut flakes, cinnamon, salt, and flaxseed. 
- In a separate bowl, mash the banana. Add coconut oil, maple syrup, and vanilla and whisk until combined. 
- Add banana mixture to the dry ingredients and stir to combine. 
- Pour onto prepared baking sheet and press evenly in a single (thin) layer
