Peach Blueberry Muffins

These muffins are so delicious and are the perfect way to start a summer morning. I always over-buy peaches when they are in season, and this is a great recipe to use some of them up! They’re made from simple, unrefined ingredients — so you can enjoy them without any guilt.

Ingredients:

(makes 10-12 muffins)

  • 1 1/2 cups almond flour

  • 1/4 cup coconut flour

  • 1 tsp baking powder

  • 1/4 tsp salt

  • 1/2 tsp cinnamon

  • 1/4 cup coconut oil, melted and cooled

  • 3 eggs

  • 1 tsp vanilla extract

  • 1/4 cup maple syrup

  • 2 ripe peaches, peeled and diced

  • 3/4 cup blueberries

Directions:

  • Preheat oven to 350 degrees F

  • In a medium sized mixing bowl, combine the eggs, coconut oil, vanilla extract, and maple syrup

  • In a separate mixing bowl, combine the almond flour, coconut flour, salt, baking powder, and cinnamon.

  • Mix the wet ingredients with the dry and stir until well combined. Fold in the peaches and blueberries and scoop batter into a lined muffin pan.

  • Bake for 25 minutes.

Lemon Blueberry Breakfast Bread

This healthy and guilt-free breakfast bread is bright and flavorful, with zesty lemon and antioxidant-rich blueberries. It’s perfectly moist and sweet, making it a perfect breakfast treat! As always, there are no refined sugars or flours - just wholesome, good-for-you ingredients! We love reheating a slice in the oven in the mornings with a little butter :)

Ingredients:

  • 1 ½ cups almond flour

  • ¼ cup coconut flour

  • 1 tsp baking soda

  • ¼ tsp salt

  • 3 eggs

  • ¼ cup coconut oil, melted and cooled

  • ¼ cup maple syrup

  • 1 lemon, zested and juiced

  • 1 cup blueberries

Directions:

  • Preheat the oven to 350 degrees Fahrenheit 

  • In a mixing bowl, combine the almond flour, coconut flour, baking soda, and salt

  • In a separate bowl, mix together the eggs, coconut oil, maple syrup, lemon zest and juice.

  • Combine the wet and dry ingredients. Then fold in the blueberries.

  • Pour into a loaf pan and bake for 45 minutes or until toothpick comes out clean

Healthy Blueberry Smoothie

This summer, I was really into smoothies. I was starting to get sick of my green smoothies so decided to try out some new flavors. This one is loaded with nutrient-rich ingredients, like blueberries, cauliflower, and flax seed and I assure you, it is delicious and satisfying! Plus, there’s protein from the almond butter and healthy fats from the avocado and flax to keep you full and satiated. Enjoy!

Ingredients:

(serves 1- 2)

  • 1 cup frozen organic cauliflower

  • 1 cup frozen organic blueberries

  • 1/2 avocado

  • 1/2 banana

  • 1 tbsp flax seeds

  • 1 tbsp almond butter

  • 1/2 tsp cinnamon

  • 1 cup almond milk


Directions:

  • Add all ingredients to a blender and blend until smooth

Healthier Blueberry Crisp

Blueberries are finally in season and I am so happy! These tiny berries are little bursts of flavor, plus they are consistently recognized for their powerful nutritional benefits! Blueberries (and berries in general) are some of the lowest sugar fruits, which is better for your gut and balancing blood sugar levels. I love to sprinkle blueberries on top on my morning oatmeal, add them to my smoothies, and snack on them between meals. I also love to bake with them, and this healthier version of a blueberry crisp is the perfect dessert to serve for the upcoming Memorial Day Weekend. Serve with some vanilla ice cream (or coconut milk ice cream) and fresh strawberries for a patriotic and tasty dessert! Also, you can use this crisp recipe for any fruits of your choosing! In the summer, I’ll usually throw in some peaches or nectarine slices, along with some seasonal berries, for a quick and crowd-pleasing dessert.

Ingredients

For the filling:

  • 1 ½ pints fresh blueberries (about 3 cups)

  • 1/2 lemon, zested and juiced (optional)

For the topping:

  • 1 cup rolled oats

  • 1/2 cup almond flour

  • 3 tbsp honey (or maple syrup)

  • 3 tbsp coconut oil

  • 1 tsp cinnamon

  • ¼ tsp kosher salt

Directions:

  • Preheat oven to 350

  • Grease a 9 inch cast iron skillet or 9x9 inch baking dish with coconut oil

  • In a small bowl, add lemon zest, lemon juice, and blueberries. Toss together. Add coated blueberries and all juices to your baking dish

  • In a medium sized bowl, add oats, almond flour, maple syrup, coconut oil, cinnamon, and salt. Mix with hands until ingredients are combined. Crumble evenly over top of blueberries

  • Bake for 35- 40 minutes or until surface is lightly browned and blueberries are bubbling

  • Cool and serve (maybe with some coconut milk ice cream and strawberries!)


Health Benefits of Blueberries

  • Blueberries are one of the best sources of antioxidants out of all popular fruits and vegetables

  • These high levels of antioxidants (flavonoids in particular) prevent cell damage and protect us from chronic diseases like heart disease, diabetes, and even cancer

  • The powerful antioxidants also help prevent against chronic inflammation in the body, which is the root cause of most diseases, like autoimmune diseases, heart disease, and anxiety/depression.

  • They are great for brain health - many studies have found that eating blueberries could improve memory and cognition

  • Blueberries have very high levels of vitamin K, which is necessary for blood clotting and bone metabolism
